[SPIKE] Investigate options and create feature - UI for staff activity history (Mediated requests)

Description

Problem: Currently, FOLIO does not provide a UI for staff to review action / activity history in the Mediated request app.

This Spike is to explore options for the best way to provide this information, as well as create a Feature for new development.
