Spike: Decide on an approach for creating end-to-end automated tests

Description

We already have some simple Karate tests, but we need a way to put together in sequence and more detailed tests, in a way that includes UI and non-mocked BE

Will use Cypress, plus BigTest can be used for E-to-E tests (but not UI unit tests)

Aim for a Folijet wiki page describing the approach, and outlining future required tickets
